This recipe is about $1.90 per serving. Please note that these numbers depend on season and store. I got all my ingredients at Aldi and made this meal in December, when bell peppers are typically more expensive. This meal is cheaper during summer. Also, I only calculated the price based on the items I used, not on the bulk I bought. You can use the leftovers for other recipes.

Ingredients

Instructions

  1. Add the coconut milk to a large pot and set to medium-high. Blend 1.5 cups water with 3 bell peppers (core removed) until smooth and add the mixture to the pot.
  2. Then wash and cut the potatoes into 1 inch cubes and add to the pot. Once the liquid is boiling, change the heat to medium.
  3. Add all the rest of ingredients EXCEPT the spinach and let simmer until potatoes are soft (15-20 minutes). Place a lid on the pot and stir occasionally. 
  4. You can also make this in your instant pot: stew - high - 5 minutes.
  5. Once the potatoes are soft take out about 1 or 2 cups and blend in a mixer. Then add the puree back into the pot. This will help make the stew more creamy. Now you can add the spinach and stir until it is all wilted.
