Vegan Carrot Donuts Recipe (with sugar glaze)

Are you wondering how to make vegan donuts?

After a few donut making fails, I finally created an easy vegan donut recipe that tastes good and is definitely healthier than store bought donuts. Vegan carrot donuts do contain sugar, but they also contain carrots, seeds, and nuts, giving this recipe a healthy touch.

I actually took my grandmother’s German carrot cake recipe, turned it into a vegan recipe, and simply placed the cake batter into donut form from this donut baking pan. The batter is just enough to fill 12 small donuts. Make sure you don’t fill the molds all the way to the top because they will rise while baking.

This vegan donut recipe is great for dessert or to bring to a party. And kids really like them, too. I like that it contains vegetables, nuts, and seeds. Also try baking this recipe with whole wheat or gluten free flour. You can leave the oil out, but understand the donuts will turn out more dry. I really enjoy the simplicity of this recipe, no crazy ingredients or expensive vegan substitutes.

Vegan Carrot Donuts

This recipe makes 12 small donuts. 1 donut contains 140 calories, 21g carbs, 3g protein, 8g fat, 2.7g fiber, and 6g added sugar.

Yields: 12

  • 30 baby carrots
  • 100g or 1 cup flour
  • 1 t baking powder
  • 2 vegan eggs: 2T milled flaxseed and 8T water
  • 1/4 cup sugar (125g)
  • 2 T coconut oil (melted)
  • 1 cup chopped almonds or walnuts
  • Glaze optional: powdered sugar and water
  1. Mix the milled flaxseed with water and let sit to thicken (5 to 10 minutes). This will create an egg like consistency.
  2. Preheat the oven to 360F.
  3. In the meantime, add the carrots into a blender and mix. Then move the carrots with all the other ingredients into a bowl and mix. I find it easiest to mix everything with my hands.
  4. Press the mixture into the donut forms (about 3/4 of the forms because they will rise a bit).
  5. Move into the oven for about 20 minutes. Take a fork and poke into the donuts. They are done when you can't see any crumbs on your fork.
  6. Once they are out of the form and cooled off you can mix a glaze with powdered sugar and water. Simply add 2T powdered sugar into a bowl and add a few drops of water at a time. Mix until the consistency is creamy then drizzle the donuts with the sugar glaze.
