Do you have lots of butternut squash from your garden harvest but don’t know what to cook? 

Today, I would like to share a variety of vegan butternut squash recipes that are healthy and easy to make so you have plenty of ideas to use all your produce.

Butternut squash is a high vitamin A food. One cup of cubed butternut covers all your vitamin A needs for the day. This amount also covers 40% of your vitamin C needs for the day. This plant even provides iron, calcium, magnesium, potassium, fiber, and protein.

Whether you want roasted butternut squash as a side for any meal, a cozy soup, or you want to use it to make a cheesy pasta sauce, below you’ll find any butternut squash recipe you can think of!

I tried to make this list with recipes that include simple ingredients and no processed foods like vegan butter, vegan sausage, mock meat, or other. However, a lot of recipes contain oil. Some of you know that I prefer to cook without oil. If you also like no-oil cooking you can leave out the oil. Read this no-oil cooking post for more info.
