Easy vegan sweet potato soup recipe that is gluten free, oil free, contains 360 calories, 16 g of protein and is rich in fiber, iron, and magnesium. Make this plant based recipe in under 30 minutes and for only $1.11 per serving.

Cost of the easy sweet potato soup

  • 5 sweet potatoes, cut $1.55
  • 1 cup sliced celery $0.30
  • 2 cups baby carrots $0.80
  • 2 cans great northern beans $1.10
  • spices $0.20
  • 1 inch fresh ginger $0.50

This recipe is about $1.11 per serving. Please note that these numbers depend on season and store. I got all my ingredients at Aldi and made this meal in August. Also, I only calculated the price based on the items I used, not on the bulk I bought. You can use the leftovers for other recipes.

Preparation

Add all ingredients with the 3 cups of water into a pot and let simmer for 20 minutes. You can also use your instant pot (I use this 6 qt. one): Set instant pot to meat/stew high for 5 minutes (closed valve). After the sweet potatoes are soft, add 2 more cups of water if needed to puree the mix into a soup. Here is the vegetable stock you can use. ENJOY!

  • 5 sweet potatoes, cut

  • 1/2 t chili powder
  • 1 t salt
  • 1/4 t pepper
  • 1 t veggie stock powder
  • 1 inch fresh ginger
  • 3 cups water + 2 cups to blend
  1. Add all ingredients with the 3 cups of water into a pot and let simmer for about 10-15 minutes until potatoes are soft.
  2. You can also use your instant pot: Set instant pot to meat/stew high for 5 minutes (closed valve).
  3. After the sweet potatoes are soft, add 2 more cups of water if needed to puree the mix into a soup.
  4. ENJOY!
