Do you think healthy eating is complicated, boring, costs a lot, or takes just too much preparation time?

Healthy eating seems to be an obstacle for many people on their journey of losing weight. Maybe you can relate when I tell you that eating out is a large temptation. Most often I get cravings for junk food that I just don’t have the discipline to turn away from.

Some of you are on a roller coaster journey too, where you make good food choices for a while, but then you fall back into your old habits, and so on. It really takes a lifestyle change and this starts with your thinking. I finally trained my body to eat clean and now I crave less often sweets and junk food. Today I am here to help guide you away from some of those obstacles so you can enjoy a healthy lifestyle (and still enjoy delicious food).

How to prepare the Ricotta Spinach Penne Recipe

Try this recipe now or PIN FOR LATER!

You can simply cook the whole wheat penne according to the package. Make sure you add some extra water to cook the noodles for the ricotta sauce later.

Add ricotta, salt, garlic, pepper, Italian herbs and spinach into a pot and turn to medium heat. Scoop some cooking water from the noodles over to the ricotta mix to make it creamy (about 6-10 T).

You really want to make sure that the spinach is wilted, otherwise it will feel like you are a cow eating grass. Add more water if the sauce stays too stiff.

Enjoy your clean eating ricotta spinach penne meal!

Tip: Try this recipe with mushrooms.
