How to prepare the Ricotta Spinach Penne Recipe

You can simply cook the whole wheat penne according to the package. Make sure you add some extra water to cook the noodles for the ricotta sauce later.
Add ricotta, salt, garlic, pepper, Italian herbs and spinach into a pot and turn to medium heat. Scoop some cooking water from the noodles over to the ricotta mix to make it creamy (about 6-10 T).
You really want to make sure that the spinach is wilted, otherwise it will feel like you are a cow eating grass. Add more water if the sauce stays too stiff.
