Do you have a hard time making vegan pizzas at home?

Well, I do!

I have tried many, many pizza recipes at home but nothing comes even close to a good restaurant pizza. Not sure what I’m doing wrong, but in our house pizza has become the one food item that is better ordered from the pizza place. 

We usually order Papa John’s original, no cheese, extra marinara, bell pepper, and mushrooms for a vegan pizza option. 

Today’s recipe is a vegan pizza recipe using pita bread as the pizza crust. You can bake it in the oven to make crisp or leave it soft. For the pizza sauce I used red pepper hummus (store bought). Then I roasted the spinach and mushrooms with some olive oil in garlic. 

Nutrition of the Pita Pizza with Red Pepper Hummus

The recipe makes 8 pita pizzas, so one serving equals 2 pita pizzas. One serving contains 390 calories, 15 g protein, 8 g fiber, and is high in B-vitamins, vitamin A, iron, magnesium, and zinc.

Cost of the pita pizzas

  • red pepper hummus $3.14
  • 10 pita bread $5.12
  • Mushrooms sliced, 2 boxes $3.36
  • 4 cups spinach $0.77

2 pita pizzas (1 serving) cost about $3.00. Please note these numbers depend on season and store. I got all my ingredients at Walmart with the Walmart grocery pick up and made this meal in April. Also, I only calculated the price based on the items I used not on the bulk I bought. If you go shopping at Aldi, this meal is probably a bit cheaper.

Pita Pizza with Garlic Roasted Spinach and Mushrooms

Yield: 4 serving (each 2 pita pizzas)
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 10 oz. roasted red pepper hummus (1 box)
  • 4 cups spinach
  • 3 cloves garlic
  • 2 boxes (16 oz) mushrooms, sliced
  • 8 whole wheat pitas
  • 1 T olive oil

Instructions

  1. Optional: Bake the pita bread for 5 minutes on 400 F to make them crisp. You can also use them soft and just skip this step.
  2. Add about 3 T water to a pan and steam mushrooms and spinach until wilted, then drain water.
  3. Add 1 T olive oil and garlic to the same pan and roast with the rest of the veggies.
  4. Spread 1/8th of the hummus (1 T heaping) then 1/8th of the garlic roasted mix on each pita.
