How to prepare the Mexican Zucchini Boats
Preheat the oven to 350 F. Roast the onion and garlic and then add the ground meat until brown. Add all the rest of the spices.
While the meat is cooking cut each zucchini in half and spoon out the center.
Divide the meat into 8 and put into the zucchini boats. Then add the beans, cilantro, and cheese (tomatoes are optional)
Place the boats in the oven and bake between 20 and 30 minutes until the zucchinis are soft.
