Today I would like to share an easy vegan recipe from Dianne’s new book “Eating Vegan – A Plant Based Cookbook For Beginners.”
I love making stuffed bell peppers, especially when I want to boost my immune system. Bell peppers are a great source of vitamin C. Matter of fact, one bell pepper contains double the amount of vitamin C than an orange!
Dianne’s recipe also includes quinoa and lentils. Both are a great plant based protein source. One serving of this meal (1 stuffed bell pepper or 2 halves) contains 339 calories, 4 g fat, 64 g carbs, 14 g fiber, 16 g protein, and 10 mg iron.
All in all this meal is balanced and can be used for weight loss, as well as for muscle building. Of course, you need to double the serving size for muscle gain.
You can also swap the rice for quinoa or the lentils for beans. In Dianne’s book, you can also find a vegan tofu sour cream recipe to top these stuffed peppers.
Dianne’s Plant Based Cookbook For Beginners
Eating Vegan starts out by explaining the reasons and myths about a plant based diet followed by detailed kitchen instructions. This cookbook is designed for beginners and guides you through vegan staples and cooking fundamentals. I really enjoy the tables on how to cook your own beans and lentils. Find the conversions from dry to cooked beans and how much water you need to prepare them!
Some people who start a vegan diet try to find vegan recipes that taste just like the meaty recipes they are used to. Dianne recommends (and I agree) to enjoy new foods for their own flavor and not try to compare them o their non-vegan counterparts.
I find her recipes very simple with ingredients you can find in most grocery stores. All recipes are adjustable and can be prepped ahead. The vegan recipe book offers plenty of gluten free option and you can omit the oil for many recipes, as well.
