Are you new to the vegan diet, or thinking about eating more plant based?
Even if you have been eating vegan for a while, chances are you like to keep your recipes easy especially on busy worknights.
The easy vegan recipes for beginners below can be cooked within 20 or 30 minutes, contain simple ingredients, and have a shorter ingredient list. Not all of them might be your favorite so pick the ones that sound easy to you.
Make sure you are able to get the necessary ingredients in your local groceries store when you pick your recipes for the week. I like to introduce 1-2 new recipe per week and plan old and trusted recipes for the rest of the week. I find this approach less overwhelming.
If you start eating vegan I suggest making two vegan meals per week and keep the rest of the week filled with meals you are used to. For the next week you can try 2 different vegan meal or increase to 3 nights of eating vegan. This approach also helps your gut bacteria to adjust and prevent bloating.
Buying fewer and simple ingredients can also be more budget friendly. When you start cooking vegan you might have to invest in different condiments or spices at first but with time you will get used to the different cooking style.
Today, I know where to get all my ingredients from and cooking plant based seems very easy. I even find that I experiment much more with recipes than before and most recipes are actually much easier than the meat based ones I used to prepare.
