Nutritional Value of the Vegan Bean Soup
As always, I use the cronometer tool to track the nutrition of all my vegan recipes and vegan meal plans. This creamy pinto bean soup is high in B-vitamins which are great for energy, high in vitamin A and K, calcium, iron, zinc, magnesium, potassium, protein, fiber, and omega 3.
Created with the help of the Vegan Weight Loss Food Pyramid, this meal gives you balanced nutrition. You can also use this recipe for the 21 day fix and count: 1.5 red, 2 yellow, 2 green containers.
Cost of the Creamy Pinto Bean Potato Soup
3 cans pinto beans $1.80
4 medium potatoes $1.50
4 stalks celery $0.40
1 bundle spring onion $1.29
2 cups carrots $0.99
2 cups spinach $ 0.30
1/2 onion $0.12
You will spend about $1.60 per serving. Please note that these numbers depend on season and store. I got all my ingredients at Aldi and made this meal in January. Also, I only calculated the price based on the items I used, not on the bulk I bought. You can use the leftovers for other recipes.
Although you don’t have to use a vegetable stock powder, it does give any recipe (especially vegan recipes) more flavor. I like to use powder as it has a longer shelf life than the liquid version and you can also sprinkle it on a salad or use it as seasoning for many recipes. You can get a good one here on Amazon.
- Wash everything and cut. Place everything except the spinach into a large pot and let simmer until the carrots and potatoes are soft.
- Instant pot: Stew - high - 5 minutes.
- Use a hand blender and press into to the soup 3-5 times. This will make it creamy, but still leaves mostly chunks.
- Then add the spinach and stir until the spinach is wilted.
- Add more spices as desired.
