You can really adjust these ingredients to your needs. For example use chicken cubes instead of beans, use other vegetables, or make the sauce with hummus, sriracha and water as a vegan power bowl variation.

You can use vegetables that you have left over to avoid food waste. Roast them the same way as described in the recipe. If you are doing the 21 day fix, please read the notes for container counts. All my healthy recipes contain between 300 and 500 calories.

Brown Rice Roasted Veggies Power Bowl (vegetarian, clean eating)

Vegetarian power bowl recipe that is 21 day fix friendly and clean eating friendly. One serving equals 2 yellow, 1 green, 1 red, and 1t, or about 500 calories and 17g of protein.

  • 4 cups cooked brown rice
  • Lime juice of 1 lime
  • Cilantro (optional)
  • Salt to season
  • 2T olive oil
  • 2 cloves garlic
  • 1 box mushrooms diced
  • 1-2 bell peppers sliced
  • broccoli (optional) ( you need 4-5 cups of raw veggies)
  • 3 cups of cannellini beans (or any other)
  • 4 T greek yogurt
  • sriracha sauce
  1. Cook the rice according to the package to equal 4 cups cooked rice.
  2. Add olive oil (1-2T), cilantro, salt, lime juice to rice while it cooks.
  3. Coat the vegetables with garlic, salt, pepper, and olive oil (1-2T), and 2 cloves pressed garlic.
  4. You can roast the vegetables in the oven on 400F or in a pan on the stove with lid until soft (10-20 minutes).
  5. Then make the sauce with greek yogurt, water, and sriracha. Add as much water as you like to create a creamy sauce and also as much sriracha as you like.
  6. Prepare each serving with 1 cup rice, 1 cup veggies, 3/4 cup beans and drizzle 1/4 of the yogurt sauce over the bowl.
