  • 1 onion diced
  • 3-4 zucchini (summer squash) diced
  • 1 pack mushroom tortellini
  • 28 oz. crushed tomatoes
  • 1 cup shredded skim mozzarella
  • 1/2 lbs. ground turkey
  • salt, pepper to taste
  • (dried basil)
  1. Cook the tortellini according to the package. Brown the onion and turkey in a pan. Add zucchini and brown for 3 minutes.
  2. Add tomato paste and crushed tomatoes to the pan and stir. Add salt, pepper and dried basil to taste.
  3. Drain tortellini and add to pan.
  4. Fill everything into a 9×13 casserole dish and top with 1 cup of the skim mozzarella cheese.
    Bake the casserole dish for 15 minutes on 380F.

#2 One Pot White Chicken Chili

One Pot white chicken chili with shredded chicken, green bell pepper, northern beans, cilantro and chili. A 30 minute dinner with one pot cooking and super frugal. One big serving for under $1.50.

  • 3 cups water
  • 1 chicken breast, cut in chunks
  • 2 cans of great northern beans
  • 2 green bell pepper, diced
  • 1 medium onion, diced
  • 1 clove garlic, pressed
  • 2 t ground cumin
  • 1/2 t chili powder
  • pepper to taste
  • 1t salt
  • 1/2 pack fresh cilantro
  • 3 t corn starch
  • 1/2 cup milk
  1. Add all ingredients into one pot except the milk and the corn starch.
  2. Let simmer until chicken is not pink anymore (20-30 minutes) (you can take the chicken out and shred it or leave the chunks)
  3. Now mix milk and starch until there are no clumps. Turn heat to high and stir in the milk mix. Take pot off the stove once the chili has thickened.

#3 Easy One Pot Penne with Salami

Easy one pot penne pasta recipe with salami and cream sauce. A 30 minute dinner for only $1.22 per plate.

  • 1 box penne pasta
  • 1 pack hard salami
  • 1 onion
  • 2 cloves garlic
  • 1 1/2 cups water

  1. Slice the hard salami, dice onion and garlic
  2. Add all ingredients to one pot
  3. Turn to high and let it boil. After that turn it to medium heat and let it simmer 15-20 minutes.
    Depending on your pasta you might have to add some more water. Check and stir your meal and adjust water and cooking time if necessary.

  2. Add the chicken to a pan with a little bit of oil. Season with salt and pepper and paprika powder (optional). Brown chicken until not pink anymore.
  3. Make avocado dressing: Put 2 peeled Avocado without core into a blender. Add 1 t salt, 1 t cumin, 1 t garlic powder, juice of 1/2 lime, 4 T sour cream, 3/4 cup water and blend.
  4. Prepare meat, rice, beans, corn, salad and tomatoes on a plate and top with the avocado dressing. Divide all ingredients into 4 servings.

  • 16 oz. spaghetti
  • 28 oz. crushed tomatoes
  • 1 t dried oregano
  • 1t dried basil
  • 1/2 t salt
  • 1/2 lb. ground turkey(or ground beef)
  • (optional: Parmesan)
  1. Cook spaghetti according to package.
  2. Brown ground meat and when done add crushed tomatoes
  3. Season with herbs and salt and mix the sauce.
  4. Drain spaghetti and top with sauce and optional Parmesan cheese.

#6 Pork Chops with Sauerkraut and Mashed Potatoes

The Pork Chops with home made gravy is one of the  country style Aldi dinner recipes with sauerkraut and mashed potatoes. It takes 35 minutes and costs less than $1.80 per plate!

  • 4 pork chops
  • beef bouillon
  • 2 cups water
  • salt, pepper, paprika powder
    vegetable oil
  • 2-3 t corn starch
  • 2.5 lbs potaoes (around 7 potatoes)
  • 1 T butter
  • 1/2 – 1 cup milk
  • 1/4-1/2 t salt
  • 1/4 t vegetable stock
  • pinch of nutmeg
  • 1 glass sauerkraut
  1. Cut each potato in 4 and place them into a pot with boiling water. Cook until soft. You can peel the potatoes first but mashed potatoes with skin is not bad either.
  2. In the meantime add 1-2 T oil into a pan and let the pan heat up on high. While the pan heats up season the pork chops with paprika powder, salt and pepper. Then place the meat into the pan and let each side brown. Turn the temperature to medium and add oil if necessary. The pork chops are supposed to brown and there should be a brown layer of crust on the pan. If this layer turns black and dry, you need to add more oil. The cooking time for the pork chops depends on the thickness of your meat. Check the inside to make sure your pork chops are not pink anymore.
  3. Add the glass of sauerkraut into a small pan and just warm it up on medium. I am sure you could also warm it up in the microwave on a microwave safe dish. I just prefer the stove cooking. Turn off the heat and put a lid on your pot to keep it warm until the rest of the meal is prepared.
  4. To prepare the gravy take the pork chops out of the pan and add 2 cups of water into it (medium heat). Add the beef bouillon cubes and while stirring try to scrape off the brown crust that the meat left on the pans’ surface. Your gravy should turn brown now. Make sure your bouillon cubes dissolve all the way. You can add more salt and pepper to taste. To thicken the gravy add 2 t cornstarch in a small bowl, cup or glass and add water until its liquid (2-4 t). Stir this mixture until there are no more clumps. Add this mix into the gravy step by step while stirring.
  5. Once the potatoes are soft drain the water. Leave them in the same pot and add milk, butter, nutmeg, salt, pepper and vegetable stock powder and mash it all up. If the mashed potatoes are still dry and thick you can add more milk to make it creamier.

#7 Spinach Ricotta Penne

  • 1/2 box (8oz) Penne Pasta
  • 4 cups baby spinach
  • 2 cups (1 jar) ricotta cheese
  • 1 cup water (from the penne)
  • 1-2 cloves garlic
  • 1 to 1 1/2 t salt
  • 1 t Italian herbs
  • dash of pepper
  1. Cook the pasta according to the package
  2. Drain the pasta and keep 1 cup of the water
  3. Add the rest of the ingredients to the pasta with the water and stir until the spinach is wilted.

#8 Easy Taco Salad with Ground Turkey

I made this Easy Taco Salad in under 20 minutes and my family loved it. Lettuce, tomato, avocado and ground turkey make this meal healthy and frugal for only $1.93 per plate.

  • 1 lettuce
  • 1 lb. ground turkey
  • 1-2 avocados
  • chips
  • 2 big tomatoes
  • shredded cheese
  • sour cream
  • 1 package taco seasoning
  1. To prepare this dinner start browning the ground turkey until it is not pink anymore. Then add the seasoning and let simmer for 3 minutes.
  2. In the meantime cut up lettuce (1/4 of the lettuce per plate), tomatoes and slice the avocado.
  3. The amount of the topping is up to you. Some want more veggies, some like it with more meat and chips.
  4. Place the lettuce on the plate and layer with chips, tomatoes, ground beef, shredded cheese and sour cream. I placed the avocado slices on the side around the plate.

#9 Pork Chops with Zucchini and Rice

This Aldi dinner meal is 21 day fix approved. A healthy weight loss recipe that is easy to prepare and costs only $1.30 per serving.
One serving equals 1 protein, 1 vegetable and 1/2 grain container. Serves 4.

  • 4 Pork Chops
  • 4-5 Zucchini
  • 1 Cup Brown Rice
  • 1 Roma Tomato
  • 1/2 Onion
  • Salt
    Italian Herbs
  1. Set up a pot for rice and cook according to the package.
  2. Preheat the oven to 425F and prepare a casserole dish for your pork chops. Season pork chops with salt pepper and Italian herbs and add diced tomatoes and onions on top.
  3. Now put the pork chops in the oven for about 20-30 minutes (depending on the thickness)
  4. While the rice is cooking and the pork chops are baking, cut up the zucchini and bake in a pan with some salt and pepper.

#10 Easy and Fresh Tomato Soup

One of my favorite FALL Aldi dinner recipes! The fresh tomato soup is done in 20 minutes, very healthy and simple.

  • 8 big or 8 cups fresh tomatoes
  • 1/2 large onion
  • 4 cups water
  • 2 t vegetable stock powder base
  • 2 t salt
  • pepper to taste
  • 3 t sugar
  • 1 t basil
  • 1 t oregano
  • 3 cloves garlic
  • 7 t butter
  • 7 t all purpose flour
  1. You will need two middle sized or big pots. Cut the tomatoes and onions in big chunks and put them into pot number 1. Add basil, oregano, salt, pepper, sugar, water, vegetable stock and cloves and cook for 15 minutes. Mix with a hand blender.
  2. In pot number 2 mix flour and butter on medium heat and stir until it browns. Then add 1 scoop of the blended tomato soup from pot 1 into pot 2 and keep stirring.
  3. Once it thickens add the next scoop. After 4 scoops you can pour all the rest of the fresh tomato soup from pot 1 into pot 2. Let it boil and stir for 1 minute and your are done

#11 Greek Moussaka Recipe

Delicious Greek Aldi dinner recipe for the whole family! This recipe is not the typical simple and fast Aldi meal, because it takes more steps and time to prepare. But it is so worth it.

  • 2 eggplants
  • 3 potatoes
  • 1 lb. ground turkey
  • parsley oil
  • salt pepper
  • garlic powder or garlic salt
  • 1 medium onion
  • 1 can diced tomatoes
  • 4 cloves garlic
  • 2 t sugar
  • 3 t oregano
  • 6 T butter
  • 6 T flour
  • 2 cups milk (500 ml)
  • 1/3 cup Parmesan
  • 1 egg yolk
  1. Preheat oven to 350 F.
  2. Slice potatoes and cook for about 10 minutes so they are not hard but also not soft.
  3. Slice eggplants and roast them in a pan and take it out. Brown meat in a little bit of oil and add diced onion, crushed/diced garlic, sugar, oregano, salt, pepper, tomatoes into pan and cook for 5 minutes on medium heat (until meat is not pink anymore).
  4. To create the béchamel sauce add butter and flour in a small pan on medium heat and stir. Add in milk slowly and step by step while stirring. Take the pan off the stove and add parmesan, seasoning and egg yolk and keep stirring.
  5. Take a casserole dish (9×13) and layer eggplant, garlic powder(salt), potatoes, meat mix, eggplant, garlic powder(salt), potatoes, meat mix, parsley, béchamel sauce.
  6. Leave in oven for 40-45 minutes.

#12 Avocado Pesto Recipe

This frugal dinner recipe works best with fresh basil leaves. The Avocado pesto is a super quick and healthy recipe. You can top any pasta with this and sprinkle with parmesan cheese. A 15 minute dinner for only $1.15!

  • 2 avocados
  • 1 clove garlic
  • 1 hand full of basil leaves
  • 1/2 lemon juice
  • 1 T pine nuts (can use crushed almonds too)
  • 1 T olive oil
  • salt and pepper
  • 1/2 lb. spaghetti
  1. Cook spaghetti according to instruction on package.
  2. Mix all ingredients for the pesto in a bowl and either mash with a hand blender or with a fork.

#13 Vegetarian Burrito Plate

Have you ever tried a burrito without the wrap? This is one of my easy and healthy Aldi dinner recipes for less than $2 and done in 30 minutes.

    1/2t garlic powder
    1t salt
    1/2t chili powder
    1/4t oregano
    1/2t cumin ground
    1/4t pepper
    1/4t red pepper/paprika powder
    1/4t onion powder

Or you can buy this Mexican seasoning.

  • 1-1/2 cup white long grain rice
  • 3 cups water
  • 1 lime
  • 1t salt
  • 1-1/2 T canola oil
  • 1 can corn
  • 1 can black beans
  • 10 medium tomatoes diced
  • 3 avocado
  • cilantro (optional)
  • 1/2 lettuce
  1. Add 1-1/2 cup rice to a pot with 3 cups of water and 1-1/2T canola oil and let boil until soft. Add more water if necessary. Season with 1t salt, juice of 1/2 a lime and some cilantro (optional). Mix all the spices in a small bowl and it should equal 3 teaspoons. One teaspoon goes into the black beans, one into the guacamole and one over the chicken. If you leave the chicken out just save the rest of the seasoning or add it to the meal as desired.
  2. For the easy guacamole mash 3 avocados with a fork and add the juice of 1/2 a lime, plus the 1 t of the seasoning mix and cilantro (optional)
    Layer the plate with rice all the vegetables and top with guacamole.

#14 Chicken Enchilada with Homemade Sauce

Chicken Enchilada with homemade enchilada sauce. Only $1 per roll and done in 40 minutes. You can top the enchilada roll with avocado and sour cream.

  • 1lb. chicken
  • 8 tortillas
  • 6T oil
  • 6T flour
  • 1/2 t paprika powder
  • 2 1/2 cup water
  • 1/2 t of each: garlic, onion powder, oregano, vegetable stock
  • pepper to taste
  • 1t of each: salt and cumin
  • 1/2 large onion
  • 2 green bell pepper
  • 1 can black beans
  • 2x 8oz tomato sauce
  1. Preheat oven to 350F.
  2. Cook the chicken until soft and also steam the onion and green bell peppers until they are soft (I just toss them into the pot with the chicken for a while)
    When the chicken is starting to fall apart you can take it out and shred it with 2 forks.
  3. While the chicken is cooking prepare the sauce. For the sauce heat up the oil with the paprika powder and the flour in a pan and stir until it darkens then stir in tomato sauce, spices, water and let thicken.
  4. Lay out a tortilla and spread the enchilada sauce on it, about 3T for one tortilla. Add veggies, beans, chicken and sprinkle with cheese. Roll it up and put into a 9×13 casserole dish. If you try to get in 8 rolls you have to squeeze them into the dish a little.
  5. If you have any leftovers just sprinkle over Enchilada rolls, add Sauce and the rest of the cheese. Bake for 20 minutes.

#15 Chicken Linguine Alfredo

Chicken Linguine Alfredo recipe for only $1.30 per plate. Easy and frugal dinner recipe in only 30 minutes.

  • 1 lb. linguine pasta
  • 1 clove garlic
  • 4 T butter
  • 4 T flour
  • 1 chicken breast cut into chunks
  • 2 t Italian seasoning / Italian herbs
  • 1 bag fresh broccoli
  • 3 cups milk
  • 1/2 cup heavy cream
  • 1 t salt
  • 8 oz shredded Colby-Monterey Jack cheese
  • 1/2 parmesan shredded
  1. Cut broccoli florets off the stem and steam until soft.
  2. Cook the Pasta according to the package (mine said 9 minutes) in a pot.
  3. Add 4T butter to a pan and cook garlic and then chicken. When chicken is not pink anymore sprinkle flour over it.
  4. Stir in milk and heavy cream step by step. Keep stirring and let thicken after each step.
  5. Toss in all the cheese, salt and herbs and serve over the linguine!

#16 Turkey Quesadilla Burger

Another one of my delicious Aldi dinner recipes. The mix of american and Mexican make this meal amazing.

  • 1 lb. ground turkey
  • 1/2 onion diced
  • 2 cloves garlic
  • 1/2 t ground cumin
  • salt
  • 4 large tortillas
  • shredded cheese
  • 1 can corn
  • 1 green bell pepper
  • 3 small tomatoes
  • 1 avocado
  • 4T sour cream
  • red paprika powder
  1. Sauté onion and garlic. Add meat, 1/2 t cumin and salt to taste and cook until meat is ready
  2. Chop and mix all the vegetables
  3. For the dressing mix 4 T sour cream, salt and red paprika powder
  4. Put the tortilla into an oil coated pan/skillet and sprinkle with cheese. When cheese is melted take the tortilla out and add meat, veggies and dressing (1T per tortilla) on one side, then fold the other side over and serve.

  • 1 lbs. Penne Pasta
  • a little bit oil to roast onions
  • 1/2 big onion
  • 3 cloves garlic
  • 2 cans diced tomatoes
  • 1 t oregano
  • 1 t basil
  • 1 t salt
  • 4 T tomato paste
  • 4 oz cream cheese
  • 1/4 cup Parmesan
  • 1 bag baby spinach
  1. Cook pasta according to package
  2. Dice onions and garlic and roast it with oil until onion is soft
  3. Add diced tomatoes with juice
  4. Add seasoning and cheeses and stir until it is melted
  5. Add spinach, noodles and mix it.

  • 1 pack tortellini/tortelloni
  • 1 glas olives
  • 1 pack of feta cheese
  • 1/2 cucumber diced
  • 5 tomatoes (middle sized) diced
  • 1/2 medium onion or 1/4 large onion diced
  • 1 T red wine vinegar
  • 1/2 t pepper
  • 1 t salt
  • 2 T olive oil
  • 1 t oregano
  1. cook tortellini according to the instruction on the package and let it cool (i just pour cold water over it until it is cooled down)
    mix it with the rest and you are done!

#19 German Rahmschnitzel Recipe

One of the amazing country style Aldi dinner recipes. Serve it with a salad and some fries, potato puffs or even pasta.

  • 4 Schnitzel (any thin meat like thin cut chicken breast or thin pork steak)
  • 1 pck. mushrooms
  • 200 ml/1 cup heavy cream
  • 1 cup beef bouillon
  • 2 T oil or butter
  • 2 T flour
  • 1 t tomato paste
  • salt pepper sweet red pepper seasoning
  • white or red wine
  • -sides
  1. First roast the meat in the pan so that it browns a lot. If it won’t brown reduce the amount of oil. Also pork will brown better than chicken.
  2. Take out the meat and brown the mushrooms. In the middle of the pan let 2 T of butter melt and add the same amount of flour and stir. Slowly pour in the heavy cream and the beef bouillon while stirring.
  3. Make sure to let the sauce cook and thicken before you pour in more.
  4. Season with tomato paste, salt, pepper and sweet red pepper powder.
  5. Finish with a little shot of white or red wine. Add the meat back into pan and let cook for 2 minutes.
    I served this with potato puffs and veggies, but Spaetzle and Salad fits best!

Tip: This is how Spaetzle looks like. You can buy it cheaper at Aldi or make it yourself with this tool.

#20 One Pot Creamy Potato Zucchini Dinner

I love one pot meals, especially when they are frugal and Aldi friendly. This Recipe is a vegetarian dinner recipe prepared in 30 minutes and for only $1 per plate. The cream, Parmesan and herbs give this dinner meal a Mediterranean flavor.

  • 3-4 zuchhini diced
  • 5 potatoes peeled and diced
  • 1 onion
  • 1 clove garlic
  • 1 t salt
  • pepper
  • 1 t Italian herbs
  • 200 ml (1 cup) heavy cream
  • 1 T Parmesan
  1. Dice the onion and cut the potatoes(peeled) and zucchini into small chunks (1/2 inch).
  2. Layer the vegetable in a pot and add the rest of the ingredients.
  3. Let simmer for about 30 minutes or until the potatoes are soft.
  4. Stir occasionally while cooking.

#21 Linguine with Mushroom Sauce

  • 1 box of mushrooms, diced
  • 1/2 onion diced
  • 1 pack linguine
  • 2 t cornstarch
  • 2 cups water
  • salt, pepper, beef bouillon (2 cubes) (or vegetable stock powder 1-2 t )
  1. Start cooking the pasta according to the package.
  2. Roast the diced onions and mushrooms in a little bit of vegetable oil for about 7 minutes.
  3. Add 2 Cups of water and the bouillon / stock, let simmer.
  4. Then season with salt and pepper to taste. To thicken the sauce mix 2 t of corn starch with some water and add to the sauce. Let boil to thicken.
  5. You can always add more starch, but make sure you mix it with water until there are no chunks before you add it to the sauce.
  6. Drain the pasta and split into 4 servings.
  7. Add the mushroom sauce to the pasta and serve.

#22 Curried Sausage Recipe with Fresh Curry Sauce

This one is another German dish from the Aldi dinner recipe. A fresh curried sausage recipe under 30 minutes. This is a great street style food idea and tastes great with fries.

  • 3 bell pepper diced (red, orange or yellow)
  • 1 clove garlic diced
  • 1/2 large onion diced
  • 1 can (6 oz) tomato paste
  • 1 3/4 cup water
  • 1 t chili powder
  • 1/2 t salt
  • 2 t curry powder
  • 1/2 t sugar

  • 1 pack of sausages
  • side (fries)
  1. Add everything except the sausages in a pot and let simmer for 10 minutes
  2. Prepare the side in the meantime
  3. purree with a hand blender and add the cut up sausage
  4. let simmer for 3-5 more minutes.

#23 One Pot Creamy Potato Curry

Easy and healthy one pot creamy potato curry with tomatoes, celery and onions. This one pot meal is done in under 30 minutes and a frugal dinner recipe under $0.75 per plate.

  • 5 Potatoes peeled and diced
  • 3 celery stalks diced
  • 1/2 large onion diced
  • 2 t curry powder
  • 1 t salt
  • pepper to taste

  • 200 ml / 1 cup milk

  1. Use one larger pot and add some oil. Turn the stove to medium heat and dice all veggies. Add them to the pot starting with the onions and celery.
  2. Now add all ingredients except the corn starch and let simmer for about 20 minutes or until the potatoes are soft.
  3. If you desire the curry to be creamier mix the starch with some water (1T) until completely dissolved. Then add to the pot and stir.
  4. Serve with chicken or pork if desired and enjoy!

  • 1 lbs. chicken breast
  • 1 cup shredded mozzarella
  • 6 t Parmesan
  • 1/2 lbs. Linguine pasta
  • 1 t salt
  • 1 head cauliflower
  • 2 cloves garlic (pressed or diced)
  1. Chop up the cauliflower and cook until soft.
  2. Dice the chicken and cook in a pan.
  3. Cook the linguine according to the package.
  4. Then drain the water with the cauliflower but leave a small amount and blend. Add the mozzarella, Parmesan, salt, and garlic and stir until the cheese is melted.
  5. Add the drained pasta and chicken and mix.

    2 lbs beef stew meat
    4 Celery stalks

    4 t cornstarch
    1 bag carrots (2lbs)
    4 potatoes
    1 t vegetable stock base (powder)
    1/2 t salt
    milk 1/3 cup
    Brown meat and add diced vegetables, pour in water/bouillon and let simmer on low for 1 hour. (cook carrots in meantime)
    Then mix milk with cornstarch until there are no clumps and add to goulash.
    Let cook until thickens a little.
    Peel potatoes and dice them and the carrots. They don’t have to be very small (see picture).
    Add water in a pot and let them cook until they are soft (about 20 minutes)
    Don’t drain all the water, leave a little bit in the pot.
    Add the rest of ingredients and mash. Add milk slowly and see what texture you like. Add more milk to the puree if you want it to be creamier.
