I always like to try vegan or vegetarian recipes to mix up my diet and balance my meat intake. Also meatless recipes are less expensive.
Beans and lentils are a great meat substitute for so many recipes. They are high in fiber and protein and help you stay full longer.
I bought the fresh salsa from ALDI to make this recipe easy and quick. You can also make your own fresh salsa if you like.
What if I like the vegan recipe?
To make this 21 day fix recipe a vegan option simple leave out the cheese. As a substitute to cheese you can sprinkle on some nutritional yeast flakes, which is high in protein and B-vitamins.

How to prepare the 21 day fix vegetarian tortilla recipe
Drain the beans and put them into a pot or pan (on medium heat). Add all the spices listed and stir. Leave on stove until all the beans are heated up.
In the meantime chop the lettuce and prepare the tortillas. Now add the beans, cheese, lettuce and salsa to your tortilla and you are done.
Substitute for cheese: Nutritional Yeast
Note: I bought fresh salsa, but you can make your own.
One large tortilla would be filled with 3/4 cup beans, 1/2 cup lettuce, 1/2 cup salsa and 1/3 cup shredded cheese.
