Are you searching for a healthy (21 day fix), low calorie mexican dinner recipe that is vegan or vegetarian?
Today I have a 21 Day Fix Vegetarian Tortilla Recipe for you that you can also turn into a vegan recipe. It is a clean eating and nutritious recipe that will please your whole family.
I always like to try vegan or vegetarian recipes to mix up my diet and balance my meat intake. Also meatless recipes are less expensive.
Beans and lentils are a great meat substitute for so many recipes. They are high in fiber and protein and help you stay full longer.
I bought the fresh salsa from ALDI to make this recipe easy and quick. You can also make your own fresh salsa if you like.
What if I like the vegan recipe?
To make this 21 day fix recipe a vegan option simple leave out the cheese. As a substitute to cheese you can sprinkle on some nutritional yeast flakes, which is high in protein and B-vitamins.

Most of my healthy recipes are created with the portion control system of the 21 day fix. That is a straight forward and easy system to lose weight fast and keep it off. The containers help to balance your diet based on 40% carbohydrates, 30% protein, and 30% fat and make it easy to create your own healthy meal plan.
When I was doing the 21 day fix program for 30 days I lost 9 lbs. and 6 inches off my waist. Since I have been doing this, I have not had any migraines (4 months so far) and I am sooo happy about this.
That is why I am so passionate about the 21 day fix program and I love to teach you how you can do it for free. So be sure to check out my other 21 day fix recipes and meal plans.

How to prepare the 21 day fix vegetarian tortilla recipe
Drain the beans and put them into a pot or pan (on medium heat). Add all the spices listed and stir. Leave on stove until all the beans are heated up.
In the meantime chop the lettuce and prepare the tortillas. Now add the beans, cheese, lettuce and salsa to your tortilla and you are done.
Substitute for cheese: Nutritional Yeast
Note: I bought fresh salsa, but you can make your own.
One large tortilla would be filled with 3/4 cup beans, 1/2 cup lettuce, 1/2 cup salsa and 1/3 cup shredded cheese.
