I bought all my ingredients at Aldi and spent about $1.70 per 21 day fix quesadilla burger. Pretty amazing, right? I also love the fact, that this can be done in under 30 minutes.

Brown the diced onion and ground meat in a pan until cooked.Add the bell peppers and cook until soft. Season with salt and pepper to taste.
Take the Greek yogurt (you can use any other yogurt too, but don’t add the water) and add the paprika powder, salt, and cumin plus 1-2 T of water and stir until creamy.

You can always add more Mexican spices to the meat or the cream.
Add the tortilla to a pan and sprinkle with 1/3 cup shredded cheese. Let sit on medium heat until melted. Then add 1/4 of the meat-mix to one side of the tortilla.
Add 1 T of the creamy topping and flip over the other side to make the quesadilla burger.
ENJOY!

Container count: 1 green, 1 red, 1 blue, 1 yellow.

Yields: 4

  • 1 lbs ground beef or turkey
  • 2 bell peppers, diced
  • 1/2 onion
  • 4 large whole wheat tortillas
  • 3 T Greek yogurt
  • 1/2 t paprika powder (or more for taste)
  • 1/2 t salt (or more for taste)
  • 1 t cumin
  • 1 1/3 cup Mexican shredded cheese
  1. Brown the diced onion and ground meat in a pan until cooked.
  2. Add the bell peppers and cook until soft. Season with salt and pepper to taste.
  3. Take the Greek yogurt and add the paprika powder, salt, and cumin plus 1-2 T of water and stir until creamy.
  4. Add the tortilla to a pan and sprinkle with 1/3 cup shredded cheese. Let sit on medium heat until melted. Then add 1/4 of the meat-mix to one side of the tortilla.
  5. Add 1 T of the creamy topping and flip over the other side to make the quesadilla burger.
  6. ENJOY!
