How to prepare the 21 Day Fix Butternut Squash Soup
Try this recipe now or SAVE FOR LATER.
Peel the potatoes and onion and remove seeds from butternut squash. Chop everything into chunks and saute in 4 t olive oil.
Add 4 cups of water and the seasoning and let simmer until soft (about 20 minutes). Now add the ricotta cheese and blend with a hand blender (I use this one) into a soup. Make sure you get all the chunks.
Note: Add more water if the soup turns out too thick for you.
