Fall is here and so is the time for soups and stews. Today I would like to share the perfect 21 Day Fix Butternut Squash Soup recipe. I added ginger to the soup recipe for an extra immunity boost.

The potatoes equal the yellow container, the carrots and winter squash green and the ricotta cheese red. I like to cook vegetarian meals in between to save money on groceries and also to mix up the meals a bit.

Peel the potatoes and onion and remove seeds from butternut squash. Chop everything into chunks and saute in 4 t olive oil.

Add 4 cups of water and the seasoning and let simmer until soft (about 20 minutes). Now add the ricotta cheese and blend with a hand blender (I use this one) into a soup. Make sure you get all the chunks.

21 day fix butternut squash soup

Serves 1 green, 1/2 red, 1 tsp, and 1 yellow container or about 340 calories.

Yields: 4

  • 1 butternut squash
  • 2 medium potatoes
  • 2 carrots
  • 1/2 onion
  • 1/2 inch slice ginger
  • 1 1/2 cups ricotta cheese
  • 1 t parsley
  • 1 t salt
  • pepper to taste
  • 4 cups water
  • 4 t olive oil

  3. Add 4 cups of water and the seasoning and let simmer until soft (about 20 minutes).
  4. Now add the ricotta cheese and blend with a hand blender into a soup. Make sure you get all the chunks.
