For one Quesadilla you count 1 yellow, 1/2 green, 1 red, 1 blue containers, or 500 calories. You can add more salsa and make it one green container, you can also use 2 tortillas (2 yellow) and divide one red container of beans.

Heat the black beans in a pot or microwave and season with cumin,salt, paprika powder, and chili powder. Then mash the beans with a fork. To make one quesadilla heat up 1t of veggie oil in a pan and add one large tortilla. Use 1/3 cup of cheese per tortilla.

Then add the rest of the cheese on top and flip over the other side of the tortilla.Press down with the spatula to flatten the quesadilla. Black Bean Quesadilla (21 day fix, vegetarian)

1 yellow, 1/2 green, 1 red, 1 blue containers, or 500 calories and 22.5 g protein.

Yields: 4

  • 4 large whole wheat tortillas
  • 3 cups black beans
  • 2 cups fresh salsa
  • 1 1/3 cups shredded mexican cheese
  • 1 t cumin
  • 1/2 t salt
  • 1/2 t paprika powder
  • 1/2 t chili powder
  • 4 t vegetable oil
