20-Minute Meals For A Quick and Healthy Vegan Dinner

Do you lack motivation to cook your own meals at night?

I get it!

Cooking your own meals as often as you can will provide so many benefits right now and into the future. You save money, you eat healthier, and if you pick the right meals you can actually save time, too.

I find that when recipes only take 20 minutes or less to prepare, I am much more likely to keep making homecooked meals. Grabbing take out food already takes around 20 minutes and it is much more expensive and unhealthy.

So today, I summarized my easiest 20-minute meals that are not just quick, but also healthy. All dinner meals contain vegetables and a source of plant based protein. Many of these are also oil free and gluten free.
