I find that when recipes only take 20 minutes or less to prepare, I am much more likely to keep making homecooked meals. Grabbing take out food already takes around 20 minutes and it is much more expensive and unhealthy.
So today, I summarized my easiest 20-minute meals that are not just quick, but also healthy. All dinner meals contain vegetables and a source of plant based protein. Many of these are also oil free and gluten free.
