Searching for affordable but healthy dinner option this week?
Trying to cook healthy but still affordable is not always easy. I created a list of 4 meals, that are healthy and you can get all ingredients at ALDI.
In my 1 Week Dinner Recipes List (below) I make 4 meals last the whole weak (actually 8 days) because we eat one meal two times (2 person). That means one meal serves 4 but 2 people can eat on it 2 nights. Cooking more food for 2 days saves money on groceries and the time cooking and planning.

You don’t have to eat the same meal twice in a row, just store it in your fridge and eat it another night, where you don’t feel like cooking!

Quick and Easy Taco Salad
For 4 Servings:
1(-2) avocado (0.99)
1 pack seasoning (0.35)
1 lb. ground turkey (3.29)
2 large tomatoes n/a
1 lettuce (1.49)
sour cream (0.50)
The prices depend on how much topping you use and where you buy the groceries. I paid for the whole meal around 7.70$ which equals just 1.93 for one plate!
Healthy Avocado Pesto
2 avocado $2.97
lemon, olive oil $0.30
salt pepper 0.10
garlic basil 0.20
pine nuts 0.25
That makes $4.75 for the meal and $1.15 for one plate.
One Pot White Chicken Chili
This meal is under $1.44 per plate using one chicken breast. If you desire more meat you can simply add more chicken. I usually freeze the other chicken breasts in the package for a later recipe.
Quick Tomato Spinach Penne
2 cans diced tomato 1.18
4 T tomato paste 0.19
4 oz cream cheese 0.65
baby spinach bag 1.79
This penne recipe will cost you no more than 6 dollars altogether that makes 1,50 dollars for a nice big plate.

If you are searching more dinner ideas for under $2 a plate I can highly recommend to try the $5 meal plan 14 days for free. The meals are very simple, you can buy the ingredients in any store (I would suggest Aldi) plus it is very fast to prepare. When I cooked their honey mustard chicken it took me only 6 minutes to prepare plus it was yummy and affordable.
