Quick Tomato Spinach Penne Recipe – $1.50 a big serving!

My family enjoys this quick, vegetarian tomato spinach penne recipe. You can buy all ingredients for less than 6 dollars (4 big servings) at ALDI and safe money

 

I can never get enough of pasta meals (check out my greek tortellini salad). I am always searching for new recipes and I really like when they are easy to prepare and i can get the ingredients cheap. I found this recipe on budgetbytes and changed it up a little bit. Meatless meals are usually cheaper anyway and this one actually fills you up pretty good! Plus it will take only around 20 minutes to prepare.

This recipe will either serve 4 people or you can just prepare a big batch and freeze parts of it/ eat it later the week as dinner or lunch.

How to prepare the Tomato Spinach Penne Recipe

Cook pasta according to package. Then dice onions and garlic and roast it with oil until the onions are soft.

Add diced tomatoes with juice, the seasoning and cheese. Stir until the cheese is melted. And last stir in the bag of spinach. It may seem a lot, but the spinach will wilt and “shrink” in the heat.

Yields: 4-6

  • 1 lbs. Penne Pasta
  • a little bit oil to roast onions
  • 1/2 big onion
  • 3 cloves garlic
  • 2 cans diced tomatoes
  • 1 t oregano
  • 1 t basil
  • 1 t salt
  • 4 T tomato paste
  • 4 oz cream cheese
  • 1/4 cup parmesan
  • 1 bag baby spinach
  1. Cook pasta according to package
  2. dice onions and garlic and roast it with oil until onion is soft
  3. add diced tomatoes with juice
  4. Add seasoning and cheeses and stir until it is melted
  5. add spinach, noodles and mix it.
  • Total time: 20
