I love making this Greek tortellini salad for cook outs! It just fills your belly and has healthy vegetables in it!  You can also take it to work or school for lunch! This salad can easily be a main meal because the pasta, cheese and vegetables fill you up and make a healthy lunch or dinner recipe.

How to prepare the Salad

I like preparing my salads in these bowls  with the lid. This way clean up is quick and I can leave the salad in the bowl to store in the fridge. They also have a non slip base which is good since I like to dump things a lot.

Greek Tortellini Salad with cucumber, feta cheese, tomatoes, tortellini, olives and onion. Simple Greek salad recipe that fills you up and fits perfectly to cook outs!

Yields: 4

  • 1 pack tortellini/tortelloni
  • 1 glas olives
  • 1 pack of feta cheese
  • 1/2 cucumber diced
  • 5 tomatoes (middle sized) diced
  • 1/2 medium onion or 1/4 large onion diced
  • 1 T red wine vinegar
  • 1/2 t pepper
  • 1 t salt
  • 2 T olive oil
  • 1 t oregano
  1. cook tortellini according to the instruction on the package and let it cool (i just pour cold water over it until it is cooled down)
  2. mix it with the rest and you are done!
  • Total time: 15
