#6 Cauliflower Alfredo (470 Calories, $2 per serving)
This recipes tastes like a creamy chicken Alfredo. My low calorie trick here is to reduce the amount of cheese and substitute a part of the cheese with mashed cauliflower. It tastes the same, but is really healthy.
You will need:
1 lbs. chicken breast
1 cup shredded mozzarella
6 t Parmesan
1/2 lbs. Linguine pasta
1 t salt
1 head cauliflower
2 cloves garlic (pressed or diced)
To prepare this recipe, chop up the cauliflower and cook until soft. Dice the chicken and cook in a pan. Cook the linguine according to the package.
Then drain the water with the cauliflower but leave a small amount and blend. Add the mozzarella, Parmesan, salt, and garlic and stir until the cheese is melted. Add the drained pasta and chicken and mix.
